Leonardo Fonseca Celis is a Colombian chef who has been living in Slovenia for more than 6 years. With his talent, experience and Latin heritage, he brings a unique fusion of fine Dinaric art, acquired in some of the most prestigious restaurants around the world. Among them are El Chato and Noma, where he has developed his cooking skills and flavour combinations.
His most notable role, however, was as head chef at the House of Franko, where he ran the kitchen for six years and earned an impressive three Michelin stars. Despite his vast experience, Leonardo is a passionate advocate of local ingredients, seasonality and personal flavour combinations that reflect his experiences, travels and roots. His approach to cooking focuses on freshness, innovation and a deep respect for the culinary arts.
